A vegetarian and lighter twist of the Parmigiana di Melanzane, with only three major ingredients: grilled (not fried!) eggplants, tomato sauce, and mozzarella cheese.

Cooking Instructions

Take it from freezer and bake at 350F for about 20 minutes, and let it rest a few minutes before serving, for the best results.

    Oh my goodness, so delicious, the eggplant was fabulous, tender, not deep fried. I bought 3 meals for my husband for Christmas gift, he is very partial to eggplant and he loved this dish. Chef Angela is a genius.
